CASSATA 1 pound cake 1 lb ricotta cheese, drained 1/4 cup granulated sugar 2 tbsp whipping cream 3 tbsp orange juice 1/4 cup semisweet chocolate chips 1/4 cup candied mixed fruit CHOCOLATE MOCHA FROSTING 1/4 cup butter softened 1/2 cup cocoa 2 cups confectioners sugar 1/2 cup hot coffee 1/2 tsp vanilla Cut cake horizontally into 3 layers. Set aside. FILLING: In a large bowl, beat ricotta cheese with an electric beater until creamy. Beat in sugar, cream and orange juice. Fold in the chocolate chips and candied fruit. ASSEMBLE: Spread filling between layer. Chill while making frosting. FROSTING: Beat all ingredients together in mixing bowl until smooth. Frost top and sides of cake.
