Omar the Pieman's Sweet Potato Pie 3 cups cooked, peeled and mashed sweet potatoes 1 egg 2 tablespoons melted butter 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg 1/2 - 3/4 cup cream 1/2 teaspoon lemon juice 2 teaspoons vanilla dash of salt 3/4 cup sugar Mash and mix the potatoes with a rotary beater until they are smooth. Then add the other ingredients to the potatoes and beat for 5 minutes. Pour filling into unbaked 9" pie shell. Place on a baking sheet and bake for 45-50 minutes at 350 degrees. Serve with ice cream or whipped cream, if desired.
