LA REINE CAKE (QUEEN CAKE) Thanks to Edith Strahan Ingredients: 1 ½ cups butter, room temperature 1 ½ cups sugar 3 eggs 2 ½ cups sifted cake flour 2 tsp baking powder ½ tsp salt ½ cup plus 3 Tbsp milk 1 tsp vanilla extract Vanilla or Almond Frosting Directions: Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt and sift 3 times; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla. Pour batter into 3 (9-inch) round cake pans which have been lined with wax paper on bottoms only. Bake at 350° for 25 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans for 20 minutes; remove from pans and cool completely. Spread frosting between layers and on top and sides of cooled cake.
